Food is a must for people to have energy to do activities. One round to the buffet table might satisfy some people while others may need three to four. What matters however is the type of food that a person chooses to pick up that could be healthy or harmful to the person’s health.

Red meat or dishes with fats and oil are risky to those who love such foods. It is not as simple as getting diarrhoea but could provove to me much more life threatening due to the high content of bad cholesterol that gets into the body through these foods.
The incidence of high cholesterol in the body is much higher these days. This is largely due to the wide variety of ready to eat foods both in the restaurants as well as grocery stores.
One important question is – Is there one best food that can lower cholesterol? There is none. One must understand that a well balance diet has to be derived from all the food groups.
People normally drink full cream milk or mix it with cornflakes or Whole Grain, the healthy way would be to use non fat milk. Both taste almost the same but the non fat milk is much healthier than the usually consumed brands.
Another practice is to consume steak with an open air barbecue or at picnics. This can be replaced with lean meats. When served with mashed potatoes, the lean meats with little fat in the center or at the edges taste much the same as a big slab of steak.
Sea Food is proved to be the healthiest, be it for lunch or dinner. The regular fish or shellfish contain Omega 3 fatty acids which are useful in reducing the levels of cholesterol.
The innocent looking candy bar of slice of cake are rich in fat. If one wants to fill the stomach he or she can try nuts or fruits. They have good fibre content, vitamins and minerals and contribute to good health.
Fruits must form a part of each meal of a person. A fruit salad or some carrots or potatoes as side dish can contribute to the balance when a person has meat or fish.
Chicken in the fried form is not good. It can still be had if the skin has been removed. Steaming is a better way of cooking a chicken.

Chicken and Noodle Soup is Easy to Make
It’s really not that difficult to make great tasting Chicken and Noodle Soup. Really! With the convenience of using a supermarket roasted chicken, You Can get incredible flavor without starting from scratch.
When I started testing recipes, I looked through all my conventional cookbooks, gourmet cookbooks, online, etc. All the recipes I found seemed to lack the flavor I was looking for – you know, that great ‘chickeny’ depth of homemade chicken soup? So, I started looking in those Cookbooks From churches and women’s organizations.
Although I didn’t find the exact recipe there, I did have some thoughts that led to my current method. I use a noodle recipe from a very sweet lady who goes to my church, Delores Koster. Her soup recipe is in the St. Francis Xavier, Carbondale, Illinois Cookbook.
The struggle I was having lied in making the stock/broth/base for the soup. That’s when I decided there had to be a better, easier, faster way to get the flavor I wanted without waiting for a whoe chicken, vegetables and some seasonings to figure out how to marry together appropriately.
One night after my daughter’s basketball game, we stopped to get a rotisserie chicken and the grocery store for dinner. My family only likes the white meat, so we have part of the chicken left over. Rather than tossing it, because no one liked the dark meat, I froze the whole thing until I could figure out how to use up the remaining chicken.
My son had been asking for homemade chicken and noodles, and that’s when I decided to give it a try. I added what was left of the rotisserie chicken into water with some vegetables and spices to make the base for the soup. After a couple of hours of simmering on the stove – and it smelled great – I strained the mixture and boned what was left of the chicken. Ironically, my kids don’t really like a lot of chicken in their soup, so this idea works out great for us. And, for some reason, they eat the dark meat in this soup.
I add the noodles and let it simmer for at least an hour or two. Usually, I have towater prior to adding the noodles. The result is really good. It has become one of those meals that everyone looks forward to, and the kids always ask for when they don’t feel well. I guess that’s the true test of chicken soup, right? I hope you enjoy it, too!
By the way, feel free to add new carrots or whatever other kind of vegetables you would like to this soup. My kids prefer to have a bowl of steamed broccolli and cauliflower that they can dip in the broth, so I don’t add anything but noodles to the strained broth for us.
Chicken Noodle Soup
1 Grocery Store Rotisserie Chicken – or the remaining part of one. (If you like a lot of chicken in your soup, you may want to add a chicken breast or two if not using a whole chicken)
1 Medium Onion, quartered
2 Stalks Celery, cut into 2 inch pieces
5 whole Peppercorns
1 T. Poultry Seasoning
1 T. Sea Salt
Water
In a Dutch Oven, or large soup pot. Add all of the above ingredients except water. Pour enough water over to cover ingredients by 1 inch.
Bring to a boil, then turn down to a simmer and leave uncovered for at least 1 hour, but preferably 2. I like to start this first thing in the morning to have for lunch, or at noon for an early dinner.
With a slotted spook, or spider, strain chicken, bones, and vegetables out of pot. Put pot back on burner, and add about 3 cups of water.
Bone chicken, reserving meat for the soup. If you would like to add vegetables, especially carrots, do so now. If adding peas, you can wait until the last 10 minutes of total cooking time.
Noodles
1 egg
3 egg yolks
Cold water
2 C. Flour
2 t. Salt
In a medium mixing bowl, add all eggs. Whisk until light. Add 3 tablespoons of cold water and salt and whisk until well blended.
Add flour and mix with a fork until you can gather it up in your hands and form a ball. Depending on the weather, I’ve had to ad a bit more water to bring it together; but, be careful not to add to much and make it sticky.
Let the dough sit for about 5 minutes. This is important because it allows the dough to be rolled out much easier, and less like elastic.

Roll out the dough into a large circle. I get it as thin as I can, about 1/8 inch, although some people like their noodles thicker. If you prefer them thick, you will need to add for time for cooking to make them tender.
Using a pizza cutter, cut the dough into noodles the desired width and length you prefer.
Put the noodles into the simmering broth and continue to simmer for at least 1/2 hour, but they are more tender if you have the time to let them simmer for an hour.
You can add the chicken about the last 15 minutes.
Taste for seasoning, because I usually need to add at least another teaspoon of salt at this point.

Make A Recipe Book With Spiral Binding
Putting together Your Own recipe book can help you organize Your Kitchen and can also make for a great gift idea. Here are some things to consider before you get started.
Gather and Organize:
The first thing you will want to do is to get all of the Recipes That you want in your book together. You may want to contact some friends and family to get some of your favorite dished of theirs, or you might want to take some from some of your favorite books so You Can have them all in one place. For the latter, just for the sake of organization, make copies of the book pages so you can have all your recipes in one hard-copy file before you start typing them up for your book.

Making the Pages:
You will, of course want to make sure that your computer has a good word processing software program. If you don’t have MS Word, you can get a program called OpenOffice online for free.
Start to input your recipes, one per page, into your document. You will, of course, want to type them accurately, but chances Are You will make the occasional tying error. Before you get to the printing stage of your project, then, you will want to make sure to proofread each and every recipe carefully. After you have typed up all of your recipes, number the pages and create a table of contents. You may not want to list every single recipe, but you will at least want to have the titles of your different sections in the table of contents so you can quickly find whatever it is that you are looking for.
Depending on whether you are simply making a recipe book for your own organizational purposes, or you are self publishing a short run cookbook for gifts for friends and family, you way or may not want to include photographs and a special cover design. If you do decide to include these items, make sure that the photos are high resolution so that they will translate well to the printed page.
Print up all your pages and read over them with a red pen at the ready to catch and mark all spelling and grammar errors, and to make sure that you like the placement of the photos and the overall look of the pages.
Printing and Binding:
If you are making gifts, and have decided to use a few color photographs in your book, you should spring for the highest quality digital printing you can afford.
As far as the spiral binding, your copy center should be able to do it, or if you have more of a do it yourself spirit, you can purchase your own easy-to-use spiral binding machine for less than $100 and make as many versions as you like, whenever you like, along with hundreds of other projects.

Five Step Method for Preparing Sauces
Sauces As a home cook, one of the hardest things for me to accomplish when first starting out was making a rich velvety brown sauce to serve on steak, lamb, veal, pork, or even chicken for help visit www.bread-bakers-assistant.com. According to Food Lover’s Companion, a sauce is “a thickened, flavored liquid designed to accompany food in order to enhance and bring out its flavor.†Now that can cover a lot of territory. It goes on to say, “In the days before refrigeration, however, sauces were more often used to smother the taste of foods that had begun to go bad.†I’m sure we have all had experiences that have proven this true even in the days of refrigeration……Think back to your high school cafeteria.
But in the 19th century, the French created an intricate process for making sauces that is still being taught in cooking schools all over the world for help visitwww.bread-machine-cookbook.com. This process involves numerous steps and if you have the time, I highly recommend James Peterson’s, “Sauces” and Raymond Sokolov’s “The Saucier’s Apprentice”. Why is it so difficult to make great sauces at home?
As Chef Alton Brown says in his cookbook, I’m Just Here For The Food, “By and large, most home cooks don’t do sauce…and that’s too bad. Traditional sauces are indeed scary.â€
The process just to prepare the key ingredients that go into a sauce takes a lot of time. It starts by making a stock with roasted beef and/or veal bones, reducing them for at least 12 hours, continuously skimming the pot,straining the liquid to remove the bones, reducing some more, adding a roux (a mixture of flour and butter used as a thickening agent) and you now have a nice brown sauce or sauce espagnole.
A professional chef will then reduce this brown sauce further to make a demi glace, the mother of all sauces. These guys spend a lot of time in Cooking School learning how to do this and take great pride in the sauces they can make with it. These stock reductions are the foundation to hundreds of classic sauces being served in fine restaurants.
Why can’t I just use a bouillon cube?
Unless you want to ruin an expensive cut of meat by covering it with a salty, corn syrup reduction, I would stay away from bouillon cubes or any of those cheap packets of instant sauces you see in your local supermarket. Just look at the ingredients to see if what’s inside is real or simply processed. You Can’t build a sound house without a strong foundation. The same is true when making sauces.
What’s a home cook to do?
Since making a great sauce at home depends of finding a good stock reduction or demi glace, I would like to offer you the following resources.
* Make it yourself. A great experience but one most of us will not take on.
* Make friends with the chef at your favorite upper end restaurant and see if he or she will share some of their brown gold with you. Be prepared to beg or pay through the nose to get them to part with this stuff. Not likely, but worth a try.
* Hire a personal chef to make it for you. You may end up having to subscribe to years worth of dinners, which isn’t all that bad, but you will have your demi.
* Buy it a high-end gourmet store. If you really search hard, you may be able to find stock reductions in the refrigerator section of some really high end stores. You won’t get much, but you don’t need a lot and it won’t be cheap.
* Williams-Sonoma is now selling their own stock reductions. I have not had that much experience with them but they usually sell high quality items.
* Find demi glace and stock reductions that are used in high-end restaurants and are available to home cooks. More Than Gourmet makes the best products I know of that fit that description.Â
My Quick & Easy 5 Step Method Quick Look
1. Sauté a shallot in butter
2. Deglaze pan with wine
3. Add demi glace
4. Reduce
5. Season with salt & pepper
More Details
1. Sauté a chopped shallot or small onion in one ounce of butter (1/4 stick) for 1-2 minutes until translucent.
2. Deglaze with 1/2-cup red wine and reduce to an essence (approximately one tablespoon of remaining liquid). Be sure to remove the pan from the heat before deglazing.
3. Add 8 ounces of demi-glace.
4. Reduce the sauce until it is thick enough to coat a spoon.
5. Season with freshly ground pepper to taste.
One last item that is optional but often used by professional chefs is a pat of butter. It adds a bit more flavor and shine to the finished sauce.
