New Gordon Ramsay Cookbook Sort of Maze
Strangley a new cookbook will be released this month in the United States entitled Gordon Ramsay’s Maze. Maze is the name for a number of Gordon’s restaurants worldwide (including one coming soon to Australia). The strange bit is, that the same book was released in the United Kingdom in 2008 without Gordon’s name or face on it!
The new US book is called Gordon Ramsay’s Maze and gives the following credits -Gordon Ramsay (Author) Ferran Adria (Foreword) and Jason Atherton (Contributor) whereas the UK version (which You Can also buy from Gordon Ramsay’s websites directly – simples has Jason Atheton as the author.
The summary of the book reads as follows – With locations in London and New York City, Gordon Ramsay’s Maze restaurant focuses on quality ingredients, imaginative flavor combinations, and simple preservations. The dishes are served in small portions, enabling patrons to savor a wide variety of tastes in one visit. This cookbook gives readers the opportunity to cook the Maze way. But it is more than a collection of the restaurant’s Best Recipes. The book explains how each dish would be served in the restaurant, following which additional recipes are offered using the same ingredients. Each signature dish – for example, Braised Shin of Veal with Pea Risotto and Butter-Roasted Cod with Silky Mash and Spiced Lentils – is followed by two additional Recipes Using the same ingredients and geared to the home cook. Covering starters, entrees, and desserts, Gordon Ramsay’s Maze shows how to make meals both artful and delicious, all highlighted by Ditte Isager’s gorgeous photographs.
The book is 256 pages and Key Porter Books will be releasing the book to US readers on October 27, 2009. The UK version was accredited to Quadrille Publishing Ltd; with the hardback edition published 18th April 2008 and was also 256 pages.

Gathering Recipes For a Fundraising Cookbook
So you’ve been given the responsibility of gathering the material for your organization’s fundraising cookbook? Don’t despair, here are a few tips that will make your job a little easier.
Make It Easy:
When You are putting together a fundraising cookbook, and you are the person in charge of gathering recipes, you are pretty much at the mercy of your contributors. As they go, you go, and their participation can make the difference between a cookbook that succeeds and one that doesn’t quite work. How, then, do you go about getting as many recipes as possible? The first thing you will want to do is to give your potential contributors plenty of time, but not so much that they forget about the project. Stand up at your next meeting and announce what the project is and how your organization members will be able to help, and when you will need to have their recipes in hand in order for them to be included in the book. Place a short announcement in your organization’s next newsletter. If feel that you need to, go ahead and use this time to sell them on the merits of having their masterful gourmet works included in the book.
To get the best participation, you need to make the process as easy as possible, and to do that you need to give them many options as to how to contribute. At the first meeting, for instance, you may want to hand out a sheet that contains a space for them to write or type in their Favorite Recipe, along with a mini bio and perhaps even a photo of the finished dish. You Can also create a Word document or PDF and email that around for the vast majority of your organization that will likely find this easier.
Be A Pest:
Once your deadlines are known and everyone who needs one has a contribution sheet, send out reminders every couple of weeks (depending on the level of participation you are receiving). To make this easier, put an email list together, where you praise those who have contributed and lean a little bit on those who have not yet. Also, stand up in any meetings your organization has during the process and give them a gentle reminder. You may think you are merely annoying people, but you should always keep in mind that the squeaky wheel gets the grease. Or perhaps the olive oil in this case.
Deadlines, Proofreading, and Organization:
Remember that your deadline will be different from that of the cookbook. You will want to give yourself plenty of time to gather the recipes, as well as to type, edit and proofread them (very important) and to organize them into categories based on the types of dishes they are ( desserts, appetizers, main courses, etc.)
If at all possible, get as many fingers as you can in on the typing of the recipes, and as many eyes in on the proofreading as you can. Not only will this ease your burden, it will help the job go more quickly and make the book free of grammar and spelling errors.

Promoting Better Communication With the Speak Logic Project
The Speak Logic Project, a nonprofit organization based in Tucson, Arizona has introduced a new concept of application modeling from communication. The new concept introduced by this Project enables everything that people do or what we do to be viewed in term of communication. The communication of what people do is being viewed as a separate entity from the actual function that is executed, where that function itself is driven by the communication entity.
In order for people to learn the new concept introduced by this Project and get familiar with it, the principle about that concept must be learned fist and understood. For that reason, The Project has started with the following books.

Five Step Method for Preparing Sauces
Sauces As a home cook, one of the hardest things for me to accomplish when first starting out was making a rich velvety brown sauce to serve on steak, lamb, veal, pork, or even chicken for help visit www.bread-bakers-assistant.com. I could put together a pretty good pan sauce using the dripping after sautéing or roasting a piece of meat but it never quite had that incredible intensity that I experience when dining out at a great restaurant.
It wasn’t until I spent some time reading about sauce making and speaking with a few chef friends that I learned it isn’t so much the “how to†but the “ingredients†that make the difference. Using my 5-step method to making a great brown sauce is easy if you have all the necessary ingredients and I will give you some great resources for find them.
What is a Sauce?
According to Food Lover’s Companion, a sauce is “a thickened, flavored liquid designed to accompany food in order to enhance and bring out its flavor.†Now that can cover a lot of territory. It goes on to say, “In the days before refrigeration, however, sauces were more often used to smother the taste of foods that had begun to go bad.†I’m sure we have all had experiences that have proven this true even in the days of refrigeration……Think back to your high school cafeteria.
But in the 19th century, the French created an intricate process for making sauces that is still being taught in cooking schools all over the world for help visitwww.bread-machine-cookbook.com. This process involves numerous steps and if you have the time, I highly recommend James Peterson’s, “Sauces” and Raymond Sokolov’s “The Saucier’s Apprentice”. They are entirely devoted to just this subject.

Why is it so difficult to make great sauces at home?
As Chef Alton Brown says in his cookbook, I’m Just Here For The Food, “By and large, most home cooks don’t do sauce…and that’s too bad. Traditional sauces are indeed scary.â€
The process just to prepare the key ingredients that go into a sauce takes a lot of time. It starts by making a stock with roasted beef and/or veal bones, reducing them for at least 12 hours, continuously skimming the pot,straining the liquid to remove the bones, reducing some more, adding a roux (a mixture of flour and butter used as a thickening agent) and you now have a nice brown sauce or sauce espagnole.
A professional chef will then reduce this brown sauce further to make a demi glace, the mother of all sauces. These guys spend a lot of time in Cooking School learning how to do this and take great pride in the sauces they can make with it. These stock reductions are the foundation to hundreds of classic sauces being served in fine restaurants.
Why can’t I just use a bouillon cube?
Unless you want to ruin an expensive cut of meat by covering it with a salty, corn syrup reduction, I would stay away from bouillon cubes or any of those cheap packets of instant sauces you see in your local supermarket. Just look at the ingredients to see if what’s inside is real or simply processed. You Can’t build a sound house without a strong foundation. The same is true when making sauces.
What’s a home cook to do?
Since making a great sauce at home depends of finding a good stock reduction or demi glace, I would like to offer you the following resources.
* Make it yourself. A great experience but one most of us will not take on.
* Make friends with the chef at your favorite upper end restaurant and see if he or she will share some of their brown gold with you. Be prepared to beg or pay through the nose to get them to part with this stuff. Not likely, but worth a try.
* Hire a personal chef to make it for you. You may end up having to subscribe to years worth of dinners, which isn’t all that bad, but you will have your demi.
* Buy it a high-end gourmet store. If you really search hard, you may be able to find stock reductions in the refrigerator section of some really high end stores. You won’t get much, but you don’t need a lot and it won’t be cheap.
* Williams-Sonoma is now selling their own stock reductions. I have not had that much experience with them but they usually sell high quality items.
* Find demi glace and stock reductions that are used in high-end restaurants and are available to home cooks. More Than Gourmet makes the best products I know of that fit that description.Â
My Quick & Easy 5 Step Method Quick Look
1. Sauté a shallot in butter
2. Deglaze pan with wine
3. Add demi glace
4. Reduce
5. Season with salt & pepper
More Details
1. Sauté a chopped shallot or small onion in one ounce of butter (1/4 stick) for 1-2 minutes until translucent.
2. Deglaze with 1/2-cup red wine and reduce to an essence (approximately one tablespoon of remaining liquid). Be sure to remove the pan from the heat before deglazing.
3. Add 8 ounces of demi-glace.
4. Reduce the sauce until it is thick enough to coat a spoon.
5. Season with freshly ground pepper to taste.
One last item that is optional but often used by professional chefs is a pat of butter. It adds a bit more flavor and shine to the finished sauce.

Cruise Review of the Sapphire Princess on a Cruise to the Orient
Embarkation was a snap. We were at the dock and on the ship within half an hour. Our luggage didn’t arrive at the cabin for several hours but it got there before dinner so that was fine. We just enjoyed the ship and since there was an amazing Ferris wheel hanging right over the ship we decided to go ashore and take a ride to see the ship from 112 meters above… Fascinating view. The ship did not leave until Midnight and passengers trickled in throughout the evening.
The Ship… This is our second cruise on the Sapphire Princess and it felt a little like coming home. We already knew the trick to find the International Dining room… you either take the aft elevators to Deck 6 or you go to Crooners on Deck 7 for your before-dinner Martini and walk aft toward Club Fusion and down one flight of stairs to the dining room. Deck 6 does not go all the way through the ship. (We think Crooners is the better route) The Sapphire is still big and beautiful. It is so new that nothing looks dated or worn and the staff is as friendly as it was last time.
The Staff… Ok everyone asks about the Cruise Director. Since we don’t particularly like to go to the shows on cruises… it was not until I turned on the TV this morning (Day10 of a 12 day cruise) that I even saw the Cruise Director, and now that I know what Lee looks like I can tell you I have never seen him on deck this cruise. Perhaps I don’t go to the same places he does.
Our cabin steward does a great job… of course he doesn’t do it until 11:30 or 12:00 and that is a bit annoying but we can live with it. You have to flag down a server on the pool deck to get and drink and then it is very slow but that may be a good think. Now at Crooners you have Daisy and Catalin who are fantastic and seem to know everyone by the second night. Our waiter is great… he had a little false start but caught on to the tables preferences quite quickly.
The Maitre D’ is there every night to tell you what time to set your clock to overnight… and it has changed a lot… but to his credit he did manage to get me a copy of the Osso Bucco recipe that is NOT in the cookbook that I bought (The cookbook is lovely so I am glad I got that too). Others at our table had a special request and he still hasn’t come through but we will see.
The Food… Some of the food is fabulous but most is average. It is a bit hit and miss… some days the buffet is good some days it is so – so. At breakfast there is a made on the spot omelet stand and they do a Fabulous Job and cook it the way you like it (in my case well done). If you want grapefruit juice you just need to ask and it appears.
The specialty buffets on Sea Days will either please you or not according to taste… there was a sushi day, a Stir Fry, an Italian, Mexican etc. The hamburgers at Trident Grill are juicy and great… the Pizza is ok but seems to be very popular. We are having too much fun at our table to bother with the huge amounts of food at Sabatini’s so I can’t comment there.
The Coffee… If you order room service coffee or coffee in the dining room it is fine. The coffee in the Horizon court tasted pretty bitter to us but again it is all a matter of taste.
Smoking… As a smoker I will say they have fewer places to smoke on the ship than a year ago but there are still enough to get by.
You Can smoke at the bar at Crooners (not at the tables), a few tables each in Explorer and The Wheelhouse, Churchills & Wake View bar allow cigars and are all smoking, one side of the tables on the outside pool deck and the rail bar at the terrace deck. I haven’t seen or experienced any comment on the smokers nor have I seen anyone smoke outside of the designated areas so it seems to be working out fine.
Kids… This particular cruise has so few kids and you hardly see them and never do you see them running wild. This would be because of the length of the cruise and the overall age of the passengers I think. We did take pictures of all the kids’ venues and they are on the website for those of you interested.
We had a fabulous time, got to see cultures vastly different than our own, sampled new foods, and saw things we really never thought we would see like ground zero in Nagasaki, the Great Wall of China, the Forbidden City, and Tiananmen Square. Wow, what a trip!
